Deessa restaurant is the 2 Michelin star fine dining restaurant of the Mandarin Oriental Ritz, Madrid. The restaurant is managed and overseen by the famous Spanish chef Quique Dacosta, who presents his extremely creative, innovative cuisine in the sumptuous, luxurious setting of one of the best hotels in Spain. Guests can get a taste of Quique Dacosta’s Valencian cuisine with the menu “Historic”, or opt for the “Contemporary” menu, which also includes dishes exclusively created for Deessa.
Location & Interior
Restaurant Deessa is located at the ground floor of the Mandarin Oriental Ritz, Madrid. This amazing hotel might very well be the best city hotel in Spain. Located in the heart of the country’s capital, Madrid, the hotel is a true Belle Époque palace jewel where art meets hospitality. It’s luxurious, elegant, ambitious and iconic, all at the same time. The main dining room of restaurant Deessa is called the “Alfonso XIII room”. Lots of gold, a lush carpet and brown, beige, gold and white colours create a bright and very luxurious atmosphere. It can definitely be seen as one of the most beautiful restaurant interiors in Madrid, if not Spain.
The dining room overlooks the Ritz Garden and terrace, and the restaurant offers outside dining during the warm summer months. There’s also an intimate private dining room, the “Condesa Masslov” room, which is a great place for groups or business lunches. The Chef’s Table can be found inside the hotel kitchen and offers a unique look into the dynamics of a Michelin starred restaurant and Quique Dacosta’s cuisine.
The Chef & the team
Quique Dacosta is one of the most famous chefs in Spain. He has been described as “the standard bearer for Spain’s modernist movement” and “a master of capturing the essence of the Mediterranean” and became famous with his innovative, creative and unique interpretation of the Valencian and tapas cuisine. At the age of 14, Quique Dacosta started his culinary career at El Poblet in Dénia. He took over the restaurant 10 years later, renamed it to “Quique Dacosta Restaurante”, and transformed the restaurant to one of the best restaurant in Spain. Quique Dacosta is now awarded with three Michelin stars and many international awards. He also famous from several television shows, (culinary) books and international projects.
Quite remarkable and unlike many top chefs, Quique is completely self-taught. The chef is known for his innovations, his modern cooking style, his ecological research, his creativity and his business talent. Besides Quique Dacosta Restaurante, Quique also owns and/or manages other restaurants in Valencia (Mercatbar, Vuelve Carolina, Llisa Negra & El Poblet Restaurante), London (ArrosQD), and now, Madrid. At the Mandarin Oriental Ritz, Madrid’s, Quique Dacosta has been appointed to design, develop and oversee all culinary operations (five restaurants and bars). Deessa, however, is the culinary flagship restaurant, and awarded with two Michelin stars in 2022. At Deessa, the talented chef Guillermo Chávez, who gained experience at the 3* restaurant Quique Dacosta, is responsible for the day to day management.
Gastronomy
At Deessa, Quique Dacosta and his team serve two degustation menus; “Historic”, which offers a selection of the most acclaimed dishes by the Chef, and ‘Contemporary’, which includes both “historic” dishes as dishes which were exclusively created for Deessa.

- Boletus bouillon with chestnuts and autumn leaves
- Caviar and Fish roe selection
- Elvers subtle and tempered Ritz Egg
- Creamy albufera rice with edible crab and almond velvet. Crunchy crab claw with béarnaise.
