Chef Patron Guy Savoy is a true connoisseur. His endless love for art and all beauty there is in life, in combination with some of the best culinary skills available anywhere, has resulted in something wonderful for all food lovers. It is a privilege to dine at Guy Savoy in Paris, and it is a privilege for everyone in Las Vegas to have one of the master’s restaurants in their town, especially since it is so good.
Guy Savoy did not just put his name on a sign above the entrance of a fancy restaurant; no, he wanted his branch in Las Vegas to be as close as possible to his original in Paris. Not a copy, but the same awareness of quality, design and style was mandatory. Architect Jean-Michel Wilmotte who remodelled the original dining room in Paris in 2000 designed the Vegas outlet and it turned out to be one of the most impressive dining rooms in Las Vegas, not in sheer luxury, but in sheer style. It took a year to set up the American restaurant so in May 2006 Restaurant Guy Savoy opened its doors on the second floor of the Augustus Tower at the Caesars Palace Las Vegas Hotel & Casino.
Guy Savoy’s son Franck was deeply involved in the Las Vegas restaurant, but he has now moved on to New York. General Manager Alain Alpe is in charge of the dining room today and there is nothing he does not know about hospitality. You can be assured of a royal treatment, but with a lot of personality which makes your experience that much more genuine and rewarding. Head Sommelier Phil Park knows everything there is to know about the perfect wines for Monsieur Savoy’s cuisine and Executive Chef Mathieu Chartron does an impeccable job in the kitchen.
Chef Chartron started to work for Guy Savoy in Paris when he was 19 years old and it only took him five years to become the youngest Executive Chef on The Strip of Las Vegas after he was promoted by his Chef Patron. Mathieu Chartron comes from Saint-Donat south of Lyon in France where his family runs the fine dining Chartron Restaurant which specialises in truffles just like Guy Savoy.
The Guy Savoy Signature Menu has all the classics which you have come to expect from Chef Savoy, like the amazing signature artichoke and black truffle, toasted mushroom brioche, and black truffle butter dish. But in addition you can also have the Innovation-Inspiration Menu with several newly invented dishes like the marinated-grilled hamachi, aged sherry vinegar, radish gelée and eggplant purée; or the seared dices of foie gras with horseradish, braised-grilled celery stalk serpentines and potato chips bouillon.
Restaurant Guy Savoy is easily one of the best restaurants in Las Vegas and it is a true gem which also easily can compete with any other restaurant in the world.
