Executive Chef Christoph Geschwendtner gained experience in various restaurants in the US. He worked with Heston Blumenthal in the Fat Duck in England and was part of the Taubenkobel team in Burgenland. In the Schlosshotel Fiss he interprets regional cuisine with culinary refinement. His half-board menu consists out of four courses and changes daily. In all dishes the chef and the over 30 heads kitchen team focus on regionality and as much as possible local produce. Only fresh products enter the kitchen and convenience food is banned throughout the hotel. Fine dining lovers can even ask for an extended tasting menu in which Executive Chef Geschwendtner will emphasise even more on refined dishes inspired by the Tyrolean heritage. Start with a delicious little stew of Guinea fowl with white truffle polenta, ruccola cream, organic egg yolk and béarnaise sauce or a superb combination of river prawns with fresh peas and a cream of green peas. One of the chef’s signature main courses is the crispy roasted breast from local farmer’s duck with gyoza filled with duck, a herb crumble, potato dumpling, peach and flower vegetables.
Sommelier and Restaurant Manager Christian Heinisch will show you his new and beautiful wine cabinets inside the restaurant with great pleasure. The wine list with more than 500 references focuses on Austrian wines with some specialties from Austrian winegrowers. Sommelier Christian also selected some top international wines like Pingus and Chateau Petrus, some rare bottles from the Ornellaia Vendemmia d’Artista Collection and numerous Manfred Krankl wines.
