For most people, the Schauenstein experience starts with a scenic train or car journey from Zürich of about two hours. The cosy village of Fürstenau was originally founded around 1257. In the surroundings of the village one can discover several beautiful castles, all surrounded by the mighty Swiss Alps. Schauenstein castle is one of the smaller ones and got its present name in 1667. The restaurant as we know it today was created about 15 years ago. From the outside, the castle gives a fairy tale-like impression, which sets the mood for a unique dining experience.
Once inside, the traditional atmosphere is well kept and extended with modern and artistic interior decorations like beautiful lamps and paintings. The two dining rooms, seating up to around 30 diners, are serene and minimalistic – a relaxing dining environment that directs the attention to the dishes. When the weather permits, guests are invited to start with the apéritif and first snacks on the partially covered terrace. The perfect kick-off with stunning view on the surrounding mountains. On the first floor of the castle, one will discover a beautiful bar and a luxurious cigar lounge. There are also six rooms where you can overnight inside the castle. Make sure to book ahead as these are highly popular. The vast majority of the guests come from Switzerland but more and more international guests find their way to the castle as well.
The attention to details is present everywhere in the castle. From the many candles that create a dreamy atmosphere, to the special furniture and tableware – everything just feels right here. Small collectable cards are presented to the guests, explaining the dishes and the wine selection. A very informative and beautiful memory to cherish.
Chef Patron Andreas Caminada was born in the region in Graubünden and worked at several top restaurants like Wirtschaft Zum Wiesengrund in Switzerland and Bareiss Restaurant in Germany. In 2003, he founded his own gourmet restaurant at the remarkable Schauenstein castle in Switzerland. His amazing culinary skills, charismatic flair and warm-hearted personality gained him the status of a national hero. Today he is responsible for one of the best restaurants in the world, thanks to his remarkable attention to details and his ability to combine simplicity in his cooking with a beautiful presentation. The tasting menu is elaborate but well balanced, very fine without being too complex, and focused on the best products the region has to offer. His creation with trout, caught in the lakes nearby the restaurant, is memorable. It comes slightly cooked, with fennel, a spinach reduction, marinated herbs, and two delicious sauces. One of the signatures dishes combines langoustine (in tartar, baked, and as a shot) with lime, a mousse of gin tonic and a delicious scallop crisp.
The chef is surrounded by a team of young and driven professionals in the kitchen and the dining rooms. The wine list is impressive but the wine pairings (especially those from Switzerland) are highly recommended as well. The sommelier does a great job combining Andreas’ detailed dishes with elegant, subtle wines.
