Dining at Thörnströms Kök is like visiting a friend who has taken the time and effort to plan your well-being – very enjoyable. Here it is Håkan and Anne Thörnström who together with their staff have done the planning. It is focus on how to create a wonderful evening by working with details not only in the food but also in continuously coaching the staff in focusing on the customers’ experience, having wall to wall carpeting in the dining area for comfort, or to create matching wine, beer or non-alcoholic drink menus to suit all.
It should not be a surprise either. Chef Patron Håkan Thörnström is one of Sweden’s more experienced chefs. He has been participating in the Swedish National Chef Team, has been a jury member of the national chef competition for several years in recent times, been twice responsible for the Nobel Prize dinner, and for the Swedish King’s sixtieth anniversary dinner.
The small restaurant is situated in a residential area near the main avenue in Göteborg. It has a nice relaxed subdued interior with a natural colour scheme with some oak touches; a Nordic warm interior. It has been there since 1997 and has always been a place where you can enjoy fine dining. The food is proper cooking with high quality ingredients and preferably Swedish. It is not molecular, experimental or full of smoke so you will not be shocked, amazed or surprised, but it is genuine and real and well thought out.
There is a small and a large tasting menu that change four to five times per year. There is also a Scandinavian four courses menu that changes continuously with the season. To all the menus you have a choice of three different matching drink menus. So a cod with beans and smoked mussel sauce can be matched either with a red Barbera, a local beer or a Chinese tea. An elegant Swedish squid with a white Douro wine, Swedish Weisse beer or green grape must from the Swedish island of Gotland. Someone has planned and thought of drivers and beer enthusiasts in advance, very considerate and enjoyable.
Restaurant Manager and Sommelier Peter Halldén tries to keep a broad choice of wine with around 500 references from around the world. For the beer and non-alcoholic the selection is mainly Swedish with interesting must from elderberries, cherries and apples and beer from local microbreweries. To finish the enjoyable contemporary Scandinavian meal at Thörnströms Kök there is a well selected coffee and tea menu.
