Knowing the high quality of Norwegian fish and seafood, it comes as no surprise that one of Europe’s best sushi restaurants is situated in Oslo. The strange thing is that the Chef Patron, Alex Cabiao, is a Filipino. In addition his Head Chef Hirzem Kuchi is from FYROM, and the Restaurant Manager Wolfgang Schleret is a German. In other words, the success of Alex Sushi is totally based on an international co-operation.
Alex Sushi opened in November 2001 and is one of Norway’s oldest sushi restaurants. Chef Cabiao was then already known as the Mister Sushi of Norway, some years after he had been headhunted to Norway from his job as chef in the Japanese restaurant Furusato in Manilla. Before opening Alex Sushi with the help of investor Petter Sandberg, he served his duties at Hotel Bristol, Hotel Oslo Plaza and Norway’s first ever sushi restaurant, Fuji in Oslo.
Coming from a poor family in the town of Samar in the Philippines, as one of ten children, Alex was given the advice from his father to travel abroad, work hard and create his own fortune. In Oslo his dream came true. Today he has proven that he has succeeded in the restaurant business, having just opened a Alex Sushi restaurant in Copenhagen as well, with Stockholm coming up next.
There are no compromises to be made by the people behind Alex Sushi. The restaurant premises are modern, stylish, exciting and different, with the big table in the main room shaped as an oval ship where the crew inside the oval is working hard to please the about 30 passengers (guests) sitting on chairs around. While getting your sushi you can watch the chefs working with optimal precision with their sharpened knives. You just have to admire their speed and finger techniques.
