Restaurant Bauernstube is one of the four restaurants at Hotel Traube Tonbach in Germany. Restaurant Bauernstube is located inside the ‘restaurant area’ in the hotel, where one can also find restaurant Köhlerstube and restaurant Schwarzwaldstube. Restaurant Bauernstube is awarded with 16 points in the German Gault&Millau guide 2018, just like its sister restaurant Köhlerstube. Both restaurants are accessible for hotel and non-hotel guests. The dining room is unique to say the least: it is small yet very cosy, with equally small windows, lots of wood and a very authentic, dark an rustic interior. In fact, this is the place where the history of Traube Tonbach started. In 1789, Tobias Finkbeiner built one of the first houses in the Tonbach valley when the forestry industry was just starting to take hold there. The entrepreneur opened a tavern for the thirsty and hungry lumberjacks and all the other workers. The original dining hall of that “Traube”, as it was then called, is Bauernstube as we know it today.
In the kitchen, Head Chef Florian Stolte cooks together with his Sous Chef Jonas Vogel. Florian Stolte has been head chef at Bauernstube and Köhlerstube since March 2012. The talented chef previously worked in the famous kitchens of Vila Joya in Portugal and the three star Schwarzwaldstube, also located at Hotel Traube Tonbach. At Bauernstube he serves hearty Black Forest specialties like his predecessors did two centuries ago. Guests can taste famous dishes like the Lentil stew, which is served with bacon, sausages, and the traditional Spätzle, or the delicious homemade Maultaschen, served with herbal broth, melted onions and potato salad. A delicious and local main course is theBlack Forest trout, served à la “Meunière”, and combine with spinach and parsley potatoes. The trout is kept alive in the cellars of the kitchen and thus served ultra-fresh and ultra-delicious.
Restaurant Bauernstube is a great restaurant to complete your visit to Traube Tonbach. A truly authentic Black Forest experience, the cosy setting and rustic interior are part of its charm. Here, one can truly feel the Swabian atmosphere of 30 years ago! Chefs Florian Stolte and Jonas Vogel serve authentic, copious preparations with respect for the products.
