Hotel Dollenberg is the life’s work of owner Meinrad Schmiederer. Once a poor boy, Meinrad always dreamt of opening a unique hotel in the beautiful region he calls home – The Black Forest. Meinrad Schmiederer gained experience as a cook first and completed an apprenticeship in hotel management at the legendary “Bühler Höhe”. At 21 years of age, he took over the small boarding house with a snack bar from his parents. Slowly but certainly, he transformed the boarding house into a five star superior hotel. Gastronomy still is important, and his brother-in-law, Head chef Martin Herrmann, now manages the two Michelin star restaurant Le Pavillon located inside the hotel.
Interior
Le Pavillon is located on the first floor of the hotel and guests enter through the hotel’s lobby. The restaurant’s interior is traditional, warm and luxurious. Lush fabrics, spacious tables, chandeliers, and silverware set the atmosphere. The eye catcher, however, is the view. Floor-to-ceiling windows provide beautiful views on the valley below and the surrounding black forest. Due to the round shape of the restaurant, each table has a beautiful view of the surroundings. The classical and elegant interior form an optimal setting for Head chef Martin Herrmann’s culinary creations.
The Chef
Head chef Martin Herrmann is a self-taught chef with more than 30 years of experience. His first training was at the hotel of his parents, where Martin learnt the basics of cooking and working in a big kitchen. When his brother in law Meinrad Schmiederer offered him the chance to lead the kitchens of his five star hotel, Martin did not have to think long. At Dollenberg, Martin Herrmann learnt the art of fine cooking and worked his way up to the top. A first Michelin followed quickly and today, his restaurant Le Pavillon holds no less than two Michelin stars and a score of 17/20 points in the German Gault&Millau guide. His cuisine is based on the French classics but merges this traditional base with the regional Baden cuisine. The best products from the forests, meadows, lakes and fields are served with respect and without frills.
Gastronomy
Martin Herrmann blends French haute cuisine with traditional Baden cuisine, and elevates his dishes with international spices and Mediterranean flavours. A good example is the starter with Carabineros, combined with basil ice cream, fennel and chorizo. His preparation with foie gras, apricot, yoghurt and brioche demonstrates his technical skills and eye for detail. Well-executed sauces bring cohesion in his dishes and cooking times are always respected, like in the delicious, perfectly cooked saddle of venison, which is combined with broccoli, ceps, cranberry and semolina dumplings. The cheese trolley is an experience and offers an extensive selection of cheeses aged to perfection by Affineur Waltmann.

Service And Wine
Wines are another great asset of restaurant Le Pavillon. Responsible for the impressive wine cellar and pairing wines is Head sommelier Christophe Meyer. A third of his cellar consists of German wine, 70% of which are from the region. French wines make up for another third, and the last part are international wines from over 30 countries worldwide. Christophe Meyer loves to think ‘out-of-the-box’ while always respecting the flavours of the chef his dishes. From sparkling sake to local discoveries: Christope Meyer will definitely surprise you with his wine pairings!
