Chef Patron Massimo Bottura is all about emotions. He creates his cuisine with references to his childhood in some dishes, but the next served to you can be something different like an inspiration of the skyline of Manhattan. Massimo Bottura’s dreams and philosophy take shape on the plates served to you and it does not matter if it is a classic Italian dish you thought you have had many times before or if it is something you have never had before from the contemporary menu.
With an incredible eye for details, complex and innovative cooking techniques, Massimo Bottura manages to create something truly unique. The emotional journey Osteria Francescana takes you on is one of a kind and something you like to do over and over again.
Osteria Francescana is the kind of restaurant you easily can write a whole book about. Foodies and critics around our planet praise Massimo Bottura as one of the absolute gourmet gods and we can only agree.
No big surprise that Massimo Bottura likes the molecular contemporary cuisine since he was working at elBulli, but he is not closing any doors to lovers of classic Italian food. At the menu you can choose to either go with an Italian classic tasting menu or allow Massimo Bottura to set his genius free with the contemporary Sensazioni tasting menu.
The team of Osteria Francescana does a tremendous job to keep the guests in the small dining room at their best. Japanese Sous Chef Tokuyoshi Yoji and Pastry Chef Takaico Kondo certainly add their flavours to the cuisine with some dishes clearly inspired by Japan as well. Massimo Bottura welcomes every guest upon arrival and he frequently walks around the tables and talks with the guests and that kind of service and genuinely shown interest to each guest is certainly not what you find everywhere.
We miss the perfectly performed rebuilt razor clam dish and we like to have another foie gras ice cream bar covered with almonds and Piedmont hazelnuts right now so we seriously have to make some room in our calendars to come back to Osteria Francescana again and again and… What are you waiting for? Go to Modena right now.
